Eneko Atxa was born in 1977 and studied at the Hostelry at the Hostelry School in Lejona. His restaurant, Azurmendi, stands out for its natural cuisine, with a character and the recreation of its dishes according to the origin of the product.
His main objective after finishing his studies was to become a chef. Therefore, Eneko Atxa worked in multiple restaurants in the Basque Country, such as Baserri Maitea, Asador Zaldua, Andra Mari de Galdakao, Martín Berasategui’s restaurant and Mugaritz restaurant.
Eneko Atxa was the Spanish champion in “signature cuisine”, in the young chefs’ category. He was also named Best Chef of the Year by the prestigious French gourmet club Fourchettes.
In 2005, Eneko Atxa founded his restaurant, Azurmendi, which quickly became part of the international gastronomic scene. In 2007 Azurmendi received its first Michelin Star, the second in 2010 and the very hard to get third Star in 2012.
Eneko and his restaurant stand out because of the creation of new dishes, the investigation of aromas and flavours and recreating atmospheres for the dinner. His creations oscillate between traditional Basque cuisine as a continuous innovation in creativity.
That is why Eneko Atxa considers his mother and grandmother as his inspiration; and the chefs Martín Berasategui, Juan Mari Arzak and Ferran Adriá, his masters.
