Ana Ros, recipient of the award for the best female chef in the world in 2017, is a self-taught cook who has managed to position her restaurant, Hisa Franko, among the top 50 in the world.
Ana Ros was a professional skier and dancer who seemed destined for a career in diplomacy until quite by chance her path crossed with Valter Kramar (her husband) and Hisa Franko. Her husband, who was the sommelier at the restaurant, had to take on the running of Hisa Franko when his parents retired. Lacking any experience as a chef or manager, Ros took over the reins of the restaurant and of the kitchen, steering Hisa Franko to success thanks to her fighting spirit and resolve.
Hisa Franko is located in a small Slovenian village very close to the Italian and Austrian borders, accounting for the influence of both countries’ cuisines. It might seem impossible for sufficient ingredients and resources to reach such a remote village, in a country not renowned for its gastronomy, or to have the infrastructure required to place a restaurant at the centre of the world’s culinary map. But Ana Ros saw opportunities rather than problems.
The cooking found at Hisa Franko involves a restoration of Slovenian tradition, with its classic, locally-sourced ingredients, blending them with innovative techniques that provide cutting-edge cuisine.
